Thai Beef Salad

THAI BEEF SALAD

Serves 1

  • 1 sirloin steak, around 225g
  • 1 tsp flaked sea salt
  • 1 tsp cracked black pepper
  • 1 pack Spicy noodles
  • 5 cherry tomatoes, halved
  • 2 spring onions, finely sliced
  • 2 radishes, finely sliced
  • Handful mint leaves
  • Salt and pepper
  • Lime wedges and sesame seeds to serve

Place your steak on a board, scatter over half of the salt and pepper and rub into the meat. Turn the steak over and repeat on the other side.

Brush a griddle pan with a little oil and place over a high heat until hot. Sear the steak for 3 minutes on each side, or until cooked to your liking, then leave to rest for 5 minutes whilst you prepare the salad.

Cook the noodles according to the instructions on the pack and toss together with the tomatoes, spring onion, radish and mint, reserving a few leaves for garnishing.

Pour over the flavouring sachets and sauce and toss everything together to coat with the dressing. Taste for seasoning and add salt or pepper as needed. Transfer to a serving plate.

Slice the steak and lay it over the noodles. Sprinkle with the sesame seeds and reserved mint leaves and serve with lime wedges.
